Finally back 1 week later. I have been wanting to post so badly, but with the long weekend, and being away from my place/routine for five nights, this was the first chance I’ve had!
I seriously loved this recipe, and it was super easy to make . . . I definitely think this will become a weeknight regular for us!
Ingredients:
–Soba noodles — the organic Hakubaku is what I use — highly recommend
-8 oz tempeh
Ingredients for the Orange Sauce:
-1/2 Cup vegetable broth
-1/4 Cup orange juice
-3 Tablespoons maple syrup
-2 Tablespoons rice wine vinegar
-2 Tablespoons Tamari
-2 cloves garlic, minced
-4 teaspoons arrowroot powder or cornstarch, + 2 Tablespoons of water
-2 teaspoons orange zest
-1 teaspoon siracha
-1/2 teaspoon pepper
-1/2 teaspoon ground ginger
-1/2 teaspoon celery salt
-Garnish with: green onions and sesame seeds
Directions:
-In a medium bowl combine all the sauce ingredients (except the arrowroot powder) and whisk together well
-Cut the tempeh into 20 – 24 small pieces, equal size, and place them in the sauce. Place that in the fridge to marinate for about 2 hours . . . feel free to marinate the tempeh even longer if you’d like. After you are done marinating, continue to the next steps
-Bring a pot of water to a boil
-Place the soba noodles in a pot of boiling water to cook. Cook to package instructions
-At the same time, remove the tempeh from the sauce and place the sauce into a small sauce pan (reserving 1/4 Cup for the next step) and mix in the arrowroot dissolved in water. Cook on medium heat for 4 – 5 minutes until thickened
-While you are cooking the noodles and making the sauce, take the 1/4 Cup sauce, toss with marinated tempeh and place on a pan. Cook 4 – 7 minutes, until nice and hot
-Drain the soba noodles
-For serving, place noodles on plate, then add your desired amount of tempeh and orange sauce
-Garnish with green onion and sesame seeds
-For a side I just steamed up some fresh broccoli and spinach

I had so much fun last weekend, Memorial Day Weekend! My sister came and stayed with me for two nights! We were able to get dinner, go on a walk by the ocean, and Saturday night we went to Boston to see Selena Gomez!
Sunday we got drinks at the yacht club, and hung out with friends (so much fun), and Monday was spent shopping! Such a great weekend ❤
