This was a great dinner! Everything went together really well…it was a bit tedious so I’m glad I cooked this one on a Saturday night 🙂
Carrot Falafel Burgers
Ingredients:
-3 medium sized carrots (forgot to include them in the photo!)
-3 cloves garlic
-2 15 oz cans garbonzo beans
-5 teaspoons coriander
-2 teaspoons cumin
-Salt
Directions:
-Grate carrots and then cut into a few smaller pieces
-Finely dice the garlic
-Drain and rinse the garbonzo beans
-Blend all ingredients together in food processor. Blend until the mixture sticks together. Some chunks are fine, as long as it all holds together when you press into a patty shape
-Divide into about 10 patties
-Gril or bake for about 10 minutes on each side. Be careful when you turn them over, they are fragile until crisped on both sides
-Serve them with either lettuce wraps or your favorite ‘burger’ buns, top with vegetables of your choice!
Baked Sweet Potato Fries
Ingredients:
-4 – 5 sweet potatoes
-7 Tablespoons safflower oil
-1 teaspoon oregano
-1 teaspoon thyme
-1/2 teaspoon sage
-1/2 teaspoon basil
-Salt and pepper
Directions:
-Preheat oven to 450 degrees fahrenheit
-Line cooking sheet with foil
-Peel potatoes, and then cut them to desired “fry” size (either wedges or strings), and spread them over the cookie sheet
-In a small mixing bowl, combine oil, salt, pepper, oregano, thyme, sage and basil. Mix well
-Toss the potatoes with the oil/spices mixture until evenly coated
-Bake for 35 minutes, and then turn the broiler on and broil for 3 -4 minutes, or until crispy
-I mixed organic ketchup with a little siracha sauce to dip the fries in!
