I had a very exciting weekend. Sean told me on Friday that he had bought me an early birthday present. He is always so thoughtful and buying me the best gifts, and I figured it was something I needed for the kitchen (I honestly thought he bought me a cute little apron) . . . but I was way off. Saturday morning I woke up to a brand new, rose gold MacBook!!! And I am IN LOVE. The best part is that I have wanted this computer since it came out and he had no idea . . . I guess he just knows me very well ❤ I have desperately needed a new computer for quite some time now, I had been using my OLD white MacBook from college that has missing keys, weighs about 20 pounds, and is SO slow. I am so ecstatic over my beautiful new baby . . . this makes my every day life 10 times better. I am so thankful that he bought me this (best boyfriend award), and I am so blessed to have him in my life . . . he’s my biggest fan and supporter
SO this is my first blog post on the new computer and I am loving every second of it . . . it’s a whole new ball game for my Blog Life!
For Sunday Brunch yesterday I made us a Seitan Scramble . . . it was so good I’m glad we had leftovers for this morning’s breakfast 🙂
Ingredients:
-2 – 3 medium russet potatoes, washed and diced
-1 small zucchini, diced
-1 red pepper, diced
-1 medium onion, diced
-3 – 5 cloves of garlic, finely minced
-1 package Seitan
-1 Tablespoon onion powder
-1 Tablespoon garlic powder
-1 teaspoon thyme
-Salt and pepper to taste
-Oil of your choice
Directions:
-Place potatoes in a pot and cover with water. Bring to a boil and cook until fork tender. Drain
-In a large skillet add oil, onion, garlic, potatoes, Seitan, and saute until potatoes are starting to crisp and onions are tender, 10 – 15 minutes —or until you’ve reached your desired crispiness for the potatoes —
-Add spices, pepper, and zucchini and mix well. Saute until pepper and zucchini are tender, 5 – 8 minutes
-Top with fresh avocado and tomato and serve as is or on Vegan bread/english muffin
